Notch-yo Nachos!

Ok so it's supposed to be notch (not) yo (your) nachos. Not your nachos, Notch-yo Nachos! Get it? Clever orrrrr yeah ok.  Let's get to it, it's not your ordinary nachos, it's not your usual unhealthy nachos, it's not your meat-free but still has dairy nachos, and it's not your traditional nachos either.  Seeeeee after saying it so many times..........Notch-Yo Nachos!  Alright I tried.

Ingredients:
Wheat Tortillas
a big pinch of onion powder, chili and oregano powder
Prepared Nacho fillings (beans, ground plant crumbles, mushrooms, onions/peppers, veggies, the choice is endless)
1/2 c soaked cashews
1/2 -3/4 c water
1 t salt
1/2 t ground mustard
1/2 t turmeric
1/2 t cayenne
1 t onion powder
1/2 t onion-ginger powder mix (alkaline garlic powder: equal parts onion and ginger powder)
Toppings:  guac, salsa, pico de gallo, cashew cream, green onions, etc..

Directions:
1. Pre heat oven to 350.  Cut tortillas into 8 triangles and lay out on baking tray, making sure not to over lap too much.  May need a couple trays depending on your quantity.




2.  Spray/brush with grape seed oil and season with S&P, and a pinch on the onion, chili and oregano powder.
3.  Bake for 10 minutes then flip/shake/move around and bake for another 10 or until lightly golden and crunchy.  (You may also re-season the other side but I found one go around to be enough)
4.  Now heat or (if your like me, prepare your fillings)
5.  Combine the rest of the ingredients in blender or food processor and blend until smooth and creamy.  

6.  Heat up and serve cheese over nachos, fillings and add toppings.  Too easy, and so good!
